Warm Napa Cabbage & Blue Cheese Salad

My friend and owner of PEAK Performance, Joe Dowdell, always tells his younger trainers “You need to give your clients what they want and what they need.” I’ve learned that if you don’t do this…they’ll just stop coming.

With that in mind I want to give you what you want (a savory side dish with bacon and blue cheese) and what you need (a carb controlled meal with fiber and cancer fighting antioxidants).

Warm Napa Cabbage Salad

Ingredients

  • 5 cups chopped Napa cabbage
  • 2 slices all-natural bacon, diced
  • 1/4 crumbled blue cheese
  • salt & pepper to taste
  • 2-4 Tbsp red wine vinegar

Servings: 2

Instructions: Place diced bacon in a non-stick pan over med heat and cook until it starts to brown. Next add the Napa cabbage, stirring until cabbage softens, 1-2 minutes (you aren’t trying to saute the cabbage, just soften and warm it a little). Mix in blue cheese and cook for one more minute. Stir in vinegar, season with salt & pepper to taste, remove from heat, and plate.

Notes: The acid from the vinegar, bite from the blue cheese, and the fat from the bacon create an amazing union flavors. This flavor combination along with the warm crunch from the cabbage will makes it an instant favorite. This side dish pairs well with chicken or beef.
