Simple Sauteed Spinach

This is a simple recipe that you can you use whenever you are in need of a fast and simple low carb/high nutrient side dish. Spinach is an incredible food containing high levels of vitamins A, K, and K. It also is a good plant source of calcium, potassium, and magnesium. Spinach also helps maintain the acid/base within our body.

Simple Sauteed Spinach

Makes 2 servings

  • 2 Tbsp extra virgin olive oil
  • 3 cloves of minced garlic
  • 1/2 red bell pepper, diced
  • One 6oz bag of triple washed baby spinach
  • Salt and pepper to taste
1. Heat olive oil and garlic in a frying pan over medium heat. Cook for 1 minutes.
2. Add red bell peppers to pan. Sautee until the peppers begin to soften.
3. Add spinach to pan and stir/mix.
4. Continue to stir spinach until it is wilted.
5. Add salt and pepper to taste

Nutrition Information per Serving:  145 calories, 14g fat (2g saturated, 10g monounsaturated, 2 g polyunsaturated), 4.5g carbohydrate, 2g fiber, 3g protein
